Weekend Dessert Recipe – Yum!

DSC00821I’m still doing an excellent job of  “Be-ing”, and boy is it nice. Cool mountain breezes. Time for extra knitting.  And did I mention the cool breezes?  The flowers here are always so pretty, due to the cooler temperatures at night. I end up taking lots of flower photos while we’re here. It almost makes me think that I’d like to be a gardener, but then I get back to St. Louis and face the reality of weeding in the heat. The gardening thought goes right down the drain, pretty fast.

I tried a new recipe for Father’s Day. We had my parents and brother over for lunch that day and my dad likes Peanut Butter Pie. This one came from the Pioneer Woman blog, which I love.

DSC02789Peanut Butter Pie

Crust:
25 Oreos
1/4 cup butter, melted.

Crush Oreos in blender or food processor until fine. Add melted butter, mix well, and press into the bottom and up the sides of a pie plate.  Bake at 350 degrees for 5-7 minutes. Let cool. (Need this recipe to be even easier? Buy one of the prepared Oreo Pie Crusts at the grocery store. That also saves you from having to eat the rest of the Oreos in the package you had to buy to make this.)

Filling:
1 cup creamy peanut butter
8 oz. cream cheese, softened
8 oz. Cool Whip, thawed
1 1/2 cups powdered sugar

Whip together peanut butter and cream cheese. Add in the powdered sugar and mix well. Add in the Cool Whip, mixing until light and fluffy. Spoon the filling into the cooled crust and refrigerate for a few hours or over night. (Lick the beaters – it’s delicious.)

Cut into 8 pieces and enjoy!

  3. Thanks for the yummy recipe. I recently discovered the Pioneer Woman blog and love it, too! She has so many great recipes, she homeschools and the girls love the horse pictures. Now she just has to add some knitting content!
    Glad you’re enjoying your trip. I agree about gardening, too. I went out to do some today but only lasted about half an hour because of the hot sun. Maybe I’ll go back out this evening.

  4. I love the last instruction of licking the beaters. That’s a favorite of mine! Although I have a tongue ring and so I have to be careful to not get it caught in the tines. It happens – and when it does, I sure do look stupid!

  5. I will have to find an alternative to the Oreos, but other than that the recipe sounds delicious! I love when a recipe makes me think of other ways I could use the ingredients!

    (My husband finds that Oreos taste burnt. Of course, I only like them for the filling.)

  6. I am absolutely going to have to make that pie – I loooove chocolate and peanut butter. It does need one small adjustment though – I think you meant cut into FOUR pieces, not eight. ;-)

  7. That pie looks positively wicked sheri, i wonder if i can find oreo’s here. The flowers are really pretty .. you know in my days when i was a big gardener(owned the house so could do what i wanted with the garden) the trick i found was to overplant and plant lots of perennials so they self seeded .. that way there was no room for weeds to grow. Or if you did still get weeds i found gardening at night relaxing, it also increased the strange looks i got from neighbours who wondered what exactly i was doing out there at 10pm but weren’t game enough to ask. This kept me highly amused.

I recommend the Peanut Butter Pie to everyone :) I found this recipe awhile back and it is so easy and yummy and is a hit with all who try it :) Be prepared with the recipe because people will be asking for it. Yes, it REALLY is that GOOD :) And yes, it does deserve all the :) I have used in this comment ;)

  9. Oh that does sound awesome! The cool weather AND the pie! Can’t wait for that cool weather – I hope it’s NICE and cool at night so we don’t stick together like glue in the tent we’re camping in (ugh, hot weather tent camping is so yucky).

    And for some reason I see one of those pies in my future with chopped peanut butter cups or maybe chopped heath bars on top. Might be a mirage, but I do see it very clearly there up ahead somewhere a few weeks into my future. heh

  10. Can’t comment on the PB pie, alas – but the flowers in the pic are gorgeous – what are they? Can you imagine socks in that exact shade of blue? Or a shawl…yum!

  11. Do you de-cream the Oreos or just process the whole cookie? I might make this for my Dad because we couldn’t get together on Father’s Day. Or maybe for a celebrating party if my husband gets the job he is up for (crossing fingers).

  17. HAH! I make this same exact recipe all of the time. It is delicious.

    I like to put extra oreo crumbs on top along with mini oreos to mark the size of each slice, The filling of that pie alone is to die for.

    I am thinking that I will have to make this again soon. =D

  21. ZOMG! I found dessert for tonight. My goodness that looks very tasty. I love the peanut butter and chocolate combo. Although I think this pie might call for one of those hard chocolate shells on top or at the very least a hot fudge sauce. yum
