A Little Color in the Day and a CONTEST!
We need some color here in St. Louis – how about you? It has been raining for days and will continue to do so until Saturday. Now you know that I like rainy, cloudy days, but this is getting ridiculous. So I thought I’d share a fall photo that my hubby took last weekend. Click on this indian corn photo to make it big, and check out the kernals on the ear third from the left. Amazing! I’ve never seen a colorburst like that before.
Good news – because I’m within a day’s delivery from Dream in Color, we’ve been able to re-stock all of the Knitosophy line already. (And our wayward box of the BOLD colorway arrived. I took a quick photo of it here – beautiful blues – but I’ll make sure that the “official” photo gets taken later this week, too. I did add them to the site. I didn’t want you to have to wait on ordering it, as several of you have asked about it.) This new dye method turns out gorgeous colorways. If you were in our sock club in 2008, Veronica experimented with this method on the Spicy Kisses colorway that she did for us that summer. I’m having trouble deciding which colorway to knit up first. I like Butterfly and Superhero because of the color mixes. But Blossom is so tangy that you can almost taste it. And I love the thought behind Strength and Laugh. (Come to think of it, those would be good colorways to use for socks or shawls or scarves for people who need a little of that in their lives.) Hard to decide. I know you all had the same problem, because so many of you bought several of them! It will be fun to see your projects as you finish them up.
While I’ve been knitting at night, I’ve been watching the Food Network. Big mistake. Now I find myself wanting cake when I go to bed. I used to like white cake with chocolate frosting, but then I tried Kirstin’s Chai buttercream frosting on a spice cupcake and that immediately moved to my favorite spot. Although now that I’ve seen this “Decadent Chocolate” photo, I think I might need to try one of those for comparison. (Photo used with permission.) Unfortunately As You Wish Bakery doesn’t ship, but I will let you know if that ever changes. I’m definitely ordering platters of her cake balls for next year’s Spring Fling. I have an “in” with her mom, Janice, who comes down to help me with the Fling every year. I’m sure she’ll deliver. This month’s blog contest question – what is your favorite flavor of cake and frosting? I’ve saved some skeins full of color for prizes and we’ll draw for them next week, so leave your comment below to be entered!

what great looking cupcakes and i love the other images as well! favorite cake and frosting…hmmm i guess that while i love black forest cherry cake my favorite overall cake is carrot cake with cream cheese frosting…so moist so rich and so yum but if it were pie or frozen dessert you asked for key lime tarts frozen and dipped into dark chocolate….now THAT is a dessert to, well, die for.
and the form is much like the cupcakes shown above!!

Favorite cake flavor and frosting: Anything with Cream Cheese frosting wins for me. I especially like the combination of red velvet cupcakes with cream cheese frosting or carrot cake cupcakes with cream cheese frosting. Bonus for the carrot cake, because since it has the word “carrot” in its name, I can trick myself into thinking that it is, in fact, good for me.

I absolutely love anything with chocolate particularly if there is a little coffee flavor to it or it’s topped with cocnut. Now I’m hungry, and all I want to eat is cake!

My favorite commercial bakery’s cake is Whole Foods’ white sheet cake, with either the vanilla or chocolate frosting.
Favorite homemade cake — the pink cake my dad sometimes made for my mom’s birthday; it was just a white cake mix and a boiled icing, but the icing had chopped-up cherries and the cake just enough red food coloring to make it pink. Also the red velvet cake with amazingly tasty icing that my mom sometimes made for my dad’s birthday.

I love fall colors! Great photography! the sky is grey here, too, but I’m trying to enjoy the brilliance of the red, yellow and orange leaves against it!
Favorite cake/frosting combo? So difficult. Right now, a toss up between carrot cake and cream cheese frosting and yellow cake with lemon buttercream. Yum.

Favorite Cake/Frosting combo? Carrot cake with cream cheese frosting…
I used to do birthday parties for kids and that kind of soured me on regular birthday cake. One can only eat so many pieces….truly. And if I had four parties in a weekend, you can imagine…
I’m also a big fan of red velvet cake tho

Oooh… Let’s see:
I like a yellow cake with chocolate buttercream sometimes. It’s quick and easy and I can make it myself. Then there’s a place in town called Honey Cafe that makes these KILLER strawberry cupcakes with strawberry frosting, and their red velvet with cream cheese are TO DIE FOR. Finally, for Easter, I made a Savannah Cream Cake, which was a nutmeg-flavored angel food cake with a sherry whipped cream frosting. That one bumped to EVERYONE’s favorite.
Pretty much, if there’s cake, I’m good.
Megan said,

This is a harder question than one might think. I’m not a huge chocolate fan — don’t hate it, just like lots of other things more. I basically eat cake as an excuse to eat frosting. My favorite is cream cheese frosting, which I mostly find on carrot cake, which I’m a little meh about. I like white cake. Maybe spice cake with cream cheese frosting? But I recently had a glorious red velvet cupcake. Maybe I need to do some more tasting and decide? p.s. I’ve had some truly yucky fondant.

I had a similar debate on cakes this past weekend. It was my boyfriend’s birthday this past weekend. So far I’ve made him a different cake every year, but this year I was kinda strapped for inspiration. I finally settled on a christmas spice cake. It was made with a meringue base, sweetened with honey and molasses, and gone in about seconds!
As much as I bake, I have to confess that my favorite cake isn’t one I make. There’s a dessert place near me that does an absolutely fantastic chocolate toffee cake. Check out the Uncle Darryl: http://www.theoriginalchocolatebar.com/dessert.aspx And I live two blocks away… maybe that’s why I haven’t had much luck losing weight lately…

An evil, evil cupcake bakery recently moved into our neighbourhood. It is so close that I could walk there, enjoy a leisurely cupcake, and walk back to work, all within a 15 minute break. The other day I had a lemon pie cupcake, that had a gooey lemon-pie filling in the middle, and soft meringue topping. But my favourite would have to be the tiramisu cupcakes. It is only by threat of bankruptcy that I don’t walk over there twice daily for a tiramisu cupcake.

I often turn to boxed cake mixes for convenience, but I always make the frosting myself. I’m not sure that I have just one favorite, but my cake choice at the dessert diner (http://www.ricksdessertdiner.com/) usually oscillates between devil’s food cake with chocolate ganache frosting and carrot cake with cream cheese frosting. Neither of which is complete without a tall glass of cold milk!
I made red velvet cupcakes for my roommate for her birthday a few months ago and the mascarpone cream cheese frosting on joyofbaking.com was -the- most amazing thing I’ve tasted in a while. My friends were eating it with a spoon!

Anything with butter cream icing, but chocolate and buttercream just go hand in hand. I just made a 6 layer rainbow cake (each layer was a colour of the rainbow) for my 5 year old and it was over 8 inches tall. To make enough icing to do the entire cake took almost two pounds of butter. TWO POUNDS. It was something so very wrong but so very right at the same time.

I’m an “outta the box” cake kind of girl. My favorite cake has always been Funfetti cake (Pillsbury, if you were wondering. Vanilla with rainbow colored jimmies in it that melt during baking and leave colored spots in the cake when it’s done). And no Funfetti cake would be complete without Betty Crocker’s Rainbow Chip frosting – white frosting with soft rainbow colored candies throughout. My favorite cake is from a restaurant – the chocolate cake with chocolate ganache on top and 4 dollops of home made whipped cream from Romano’s Macaroni Grille.
My dear son found out too that you can get the cake “to go” for my birthday – and he gets it home in plenty of time so the ganache is still warm and just setting on the cake. There was something my mother used to make around Easter – Simnel Cake – it’s not very sweet – just sweet enough and has raisins in it – and very good with tea or even coffee – no icing on it – but I am not an frosting fan.

I like the chocolate spice cakes I make out of whatever mix I have on hand and crazy spice combos. I got tired of the traditional mix of cloves, cinnamon and allspice, so I”ve tried things like Thai seasoning blends and added some diced jalepeno, or Red Curry and Dill. Unusual to say the least, but sometimes they turn out worth repeating. If I frost them it’s usually Cream Cheese frosting.

My all-time favorite is my mom’s German chocolate. That recipe died with her unfortunately because it wasn’t written down anywhere. She cooked her icing and used semi-sweet morsels with fresh coconut and pecans.
My favorite cake is chocolate and icing is cream cheese.
It’s raining here now and I had a pedi this afternoon and am not going back out.

His favorite is German chocolate with German chocolate frosting. Maybe I’ll make them birthday cupcakes instead. Luckily, it’s also my favorite cake and frosting.

A homemade Red Velvet cake (heavenly rich devil’s food chocolate) with cream cheese frosting. A little restaurant I worked in in high school, that has long since passed on to that Great Former Restaurant Heaven, had it for sale all the time — the high school secretary’s sister baked all the cakes and pies. I still miss you, Evergreen Restaurant Red Velvet cake! Today, since I can’t get that any more, I’m just happy with chocolate with chocolate on top. And preferably with a few layers of dark chocolate ganache.

It’s a toss-up between homemade chocolate cake with chocolate frosting, or carrot cake with all of the goodies in it, crushed pineapple, shredded carrots, coconut, raisins, walnuts and yummy cream cheese frosting on top! Great, now I want to make one! Maybe I’ll take it to work tomorrow for Boss’s Day!

The strawberry jelly roll.
Beginning when I was three years old, and every year since then, my dad has made me a jelly roll for my birthday. When I was turning three he gave me the Betty Crocker Cookbook and told me I could pick anything I wanted. I picked a white jelly roll filled with cream and strawberries. It’s become an annual tradition. The first few years the filling was CoolWhip instead of cream, then DreamWhip as we worked our way towards more the real stuff: delicous freshly whipped cream. Now that I live half way across the country the tradition doesn’t happen on the same day, but each year we make sure a jelly roll is part of our tradition to celebrate another year of life.

My very favorite of all is apple cake (spice cake + diced apples and slivered almonds) with a sugar glaze. How ever, if someone were to stop by with any of the cakes mentioned already, I’d be willing to to help out. No point letting a good cake go to waste!

They have cupcakes called Black Tie which has a triple chocolate cake and a secret vanilla frosting which I KNOW has amaretto in it – delicious! i have two favorite frosted varieties (that i would choose more than others, but consistent with the above statement, i rarely refuse cake of any kind) – the first is hummingbird cake and the second is red velvet – real red velvet, southern style – with a dose of cocoa and fluffy (not gooey) cream cheese frosting not white cake with red food coloring added.

My favorite cake nowadays is german chocolate with german chocolate icing. But the favorite cake of my childhood (lost the recipe), is a cake called a milk cake.s
My grandma would take a can of milk (mom says it was evaporated milk, but by the time Grandma got through with it, it tasted kind of like sweetened condensed milk, but thicker), mix it with sugar and other stuff and cook it on top of the stove. She’d add chopped pecans, and made a two-layer cake from scratch with pecans throughout the batter. That is the best cake I have ever had in my entire life!
All I can tell you is I think she used a 1/2 pound to a pound of butter that came in this big round cake, and if you didn’t soften it up you’d be shaving off slices forever to get what you need.
I wish I’d had the sense to write it down and keep it. There’s no telling where my notes wound up.

I’m not really much of a cake fan, but there are some that are irresistible even to me. My favorite cake-frosting combination has to be a moist and quite dark chocolate cake that I make, with a simple (again: quite dark) chocolate frosting that has lots of After Eight or other mint chocolates melted down into it. Divide the cake into squares, decorate with the same chocolates cut into triangles or whatever shape you like … Only thing I don’t like is how fast it disappears. Or, actually, is transformed: into big smiles on people’s faces!

My current fave is my homemade chocolate with chocolate buttercream. But my favorite cake of memory was done at an elementary school cafeteria when I was little. Deep dark chocolate cake with hot pink butterceam icing. They baked it in huge sheet pans and cut it into squares and we always called it “pink cake”.

Years ago I found a recipe for a chocolate/orange marble cake. Instead of frosting between the layers you used sliced oranges. Yum. Years later, on the side of a cake mix box, I found instructions to “jazz” up the box mix. Since you were just adding in a couple of different flavors, namely orange peel, I decided to see if I could not do it with a “real” from scratch cake. Can you tell my favorite cake is any chocolate with orange combination?
I do not think we will get any fall color here in Idaho. We had snow and really cold weather before the leaves started to turn and now the green leaves are just falling off of the trees. I think they got freeze dried. We usually have a really pretty fall with lots of yellow from the aspen and some red canyon maple thrown in.

Ohhhh …. my goodness, I make homemade BANANA muffins (with the really rotten black bananas) with a homemade LEMON frosting.
People gobble up what I have not eaten (I usually have 2-3 after I make ‘em cause they are just sitting there waiting for me to eat them) – these are the best muffins ever. Easy recipe and if you whip the butter for the frosting until it is almost whipped cream, the frosting is soft and the BEST part. I can’t even type this without my mouth watering.

My family has had a receipe for Red Velvet Cake circulating for years. Legend has it that my Uncle purchased the receipe from the Waldorf Astoria hotel in the early 1950’s.
ooooo – It is not like any red velvet I’ve ever had. The frosting is like a rich, buttery, whipped cream and the cake is dark and moist and well… velvety.
If my birthday ends in a 0 this year (and starts with a 5) do you think I can get away with making myself two?

Favorite as in only one? This is highly mood dependent. Spice cake with real cooked buttercream, white cake with a hint of lemon and decorator’s frosting with vanilla and almond flavoring, Red Velvet cake with roux based frosting, spiced banana cake with vanilla glaze – hard to pick just one! I think my absolute favorite, and the only non-homemade one in the list, would have to be cone cupcakes made with Pillsbury’s Funfetti cake mix and Betty Crocker French Vanilla frosting.

My favorite cake is chocolate Texas sheet cake with the homemade icing that goes with it. If you’ve never had Texas sheet cake, it is not like other cakes. The texture is far less dense than normal cake, making it absolutely melt-in-your-mouth. The icing is quite runny at first and solidifies a bit as the cake cools. This lets the icing seep into the cake, making it even more soft and chocolaty. If you’ve had Texas sheet cake and it wasn’t melt-in-your-mouth delicious, it was made wrong. I’ll have to make you a proper one. There is just nothing like a big forkful of warm, pillow-soft chocolate cake dripping liquid chocolate on the way to your mouth.

I would say either carrot cake with cream cheese frosting (but this could very well be because I’ve been craving it for a few weeks now) or pretty much any cake made from scratch with home made butter cream frosting. One of the best I’ve made is a black forest cake: rich, dense, chocolate layer cake with butter cream frosting in between the layers and on the outside, wrapped in a shell of tempered chocolate, dark and milk, made to look like wood. Delicious!!

Ooh, this is a hard one. I really like to bake so I often bake different kinds. For the decadent days, I really like dense chocolate cupcakes with rich chocolate frosting. Well my all time favorite is a devils food cake with ‘white fluffy icing.’ That’s what we always called it as kids. The icing is egg whites, cream of tarter, sugar, water and vanilla and you make a syrup out of the sugar, cream of tarter, and water then it gets poured slowly into a mixer beating the egg whites. & just before the end you beat in a little vanilla. If anyone wants the recipe for the ‘white fluffy icing’ you can e-mail me.
If I had to choose a second it’d be yellow cake & chocolate icing.

Mmm…cupcakes! I love Black Forest cakes and can only imagine how tasty that flavor combination would be on a smaller scale. If it’s a cupcake, it has fewer calories, so I can eat more, right?
I’m also developing a taste for fruity sweets as I get older. Maybe something wih peaches poached in rum atop a whipped frosting on a yellow or spice cupcake?

The “oakmonter” is my favorite cake (or cupcake version) it is from a local bakery and it is chocolate cream cheest cake (almost lke cheesecake) with a whipped mocha frosting between layers and as an icing topped with chunks of chocolate, decadant chocolate ganache, and a merrichio cherry (which I give to my husband-no cherries for me…just give me the chocolate) It is delicious and I have caused many people to share my love of this yummy cake by serving it at home and taking it to many a party
. Yum…I think I might have to go get one today:-)

I have my own recipe for my favorite cake. It is made with french vanilla cake mix, a TBS of oil, 3 eggs, TBS lecithen granules, TBS wheat germ flakes, TBS flax, and a container of baby food. There is no frosting, but cream cheese with nuts could be added for a topper. This is a nice and healthy cake that tastes sweet and moist.

German chocolate cake (which, as I’m German, is humorous because it’s not actually a German food – just made with German chocolate) which has a coconut pecan frosting.
Barring that, chocolate whipped cream cake – a moist, falling-apart-on-your-fork cake with a chocolate whipped cream icing, which is also spread between the layers.
Can you tell I like chocolate?

The Food Network is notorious for making my tummy rumble….. Favourite cake and frosting? Probably spice cake with cream cheese frosting, but personally I think you could put cream cheese frosting on a bicycle tire and I would happily eat it! Now you’ve got me thinking about chai frosting, as chai is my favourite hot drink (Stash double spice–mmm!). Moist chocolate cake with chocolate raspberry ganache never hurt anyone, either. Must stop thinking about cake!

Wow, just reading everyone else’s comments makes me want to bake and bake! For me, the best cake desserts have to include chocolate. And usually another flavor to set that off – coffee, almond, caramel or raspberry being among my favorites. Some of my favorite creations have involved ice cream as well. Like almond cake with coffee ice cream, chocolate sauce and raspberries. Or chocolate pound cake with no frosting at all. Or Marcel Desaulnier’s Death By Chocolate (he has published tons of cookbooks – you too can make it at home!). I could go on and on…

Spice cake (also my dad’s favorite) with a thick, fudgy chocolate frosting that has a shot of espresso in it!
If you have the Joy of Cooking, it’s the Velvet Spice Cake (has yogurt or sour cream in it, yummmmm!) and whichever of the chocolate icings is recommended at the bottom of the recipe. The icing recipe will call for 1/4 c. of coffee – I substituted espresso for the darkest, chocolatiest, coffee-ist icing ever!
To die for.
