I have been a fan of chocolate cake with a creamy peanut butter icing for a very long time. There is something about chocolate and peanut butter that just makes my mouth water. Put that combination together with a glass of good Merlot and you have just won the lottery.

Red Velvet with Cream Cheese Icing. Not any Cream Cheese Icing, this cream cheese icing. Mix together 1 cube room temp butter, 1 room temp 8 oz pkg cream cheese, beat until smooth and then add 1 small jar marshmallow cream and 1 tsp vanilla. Beat until light and fluffy. With out a doubt the worlds best cream cheese icing. In my opinion anyway.

I haven’t been keeping on top of my blogs recently (b/c I was getting ready and going to Rhinebeck!) so I’m sure I’m probably too late for the contest, but I love cake/cupcakes so much that I had to comment (and, I wanted to add for you Sherri, that I get horrible cravings from the Food Network too).

A recent favorite is red velvet (with cream cheese frosting) though really I’m an equal-opportunity cake lover.

I was thinking how I was going to answer because I like a lot of cakes, but I would have to think that the one I like the best is lemon cake with lemon icing. It just seems so refreshing. My next favorite is strawberry shortcake with whipped cream….that’s a cake, right?
