Weekend: Soup + Moving
That title pretty much sums up what I’ll be doing this weekend. Our new space is done!! (Well, ok – they still have a few ladders, tubs and tables to take out from the construction.) Here’s what the long part of the U-shape looks like, empty. (Compare that to this one, before they had started the finish work.) So we’ll have the same group of movers back to wheel things from one side of the hall to the other on Saturday morning. Then we’ll spend the rest of Saturday and more time next week, fine tuning everything over there.)
So many of you asked about having the webcam going for the moving in process, so we’ll be sure to connect that first thing. Not that I don’t think you have better things to do a week before Christmas. But if you’re sitting and knitting those last minute gifts and want to pop in to view the chaos once in awhile, we’ll be there!
Since this will be a busy weekend, there’s nothing better to have for dinner than a hearty soup that you can toss in the crockpot in the morning. This has turned into my favorite soup recipe this fall, and it’s easy!
4 cups chicken broth
2 cups water
2 boneless, skinless chicken breasts
1 package of Rice-a-Roni long grain and wild rice
1/2 tsp. salt (plus more to taste)
1/2 tsp. pepper
3/4 cup all purpose flour
1/2 cup butter
2 cups half and half (can use fat free, or a mix of both, or be brave and go full fat….)
1 cup sliced carrots (or a pack of frozen, sliced carrots)
1 cup diced celery
Combine broth, water, carrots, celery, chicken and rice (including the seasoning packets from the rice mix) in a large slow cooker. Cook on low for 6-8 hours (or on high for 4 hours).
Take chicken out and shred it. Add it back into the slow cooker.
In a small bowl, combine salt, pepper, and flour. In a medium saucepan over medium heat, melt the butter. Stir in the flour mixture slowly, whisking to form a roux. Whisk in the cream a little at a time, until fully incorporated and smooth. Stir cream mixture into slow cooker and let cook on low for 15 more minutes.
(I usually double this recipe so that we have lunch leftovers for the next couple of days as well. It reheats well.)

Congratulations and good luck on the move into the real space…it will seem like you just moved, that’s right you did just move…lol! Hopefully moving within the building will be even easier than the move to Ft Collins!
Soup looks good too bad it’s 60ish here or I would be making it…

The soup looks wonderful. I’ll have to try it.
I tried a new recipe Monday for a Crockpot Chicken Tortilla Soup using Hatch Green Chili Enchilada Sauce. Found the recipe on the inside of the can label. It was wonderful, but my crockpot could have been just smidge larger.
Glad you are getting Loopy into the newly finished space.

YAY…………so excited to see the progress. You are amazing Sheri. The mail is definitely slow at this time a year. So used to getting my package in two days. Ordered Tuesday and it went Wednesday. Colorado Elves, thankyou so much for the quick turnaround. As of this morning, my package is somewhere in transit. The soup looks yummy- Sounds like a plan for my next trip to the grocery store. Time to get my needles moving. Still have my husbands scarf to finish and hopefully one more…..eeeks.

It looks FABULOUS!!! -omygoodness, so exciting!! I hope you have a chance to celebrate Christmas and take a bit of a break from it all.. and congratulations to you for getting a beautiful new place and taking the plunge with the MOVE (so bright and love all the windows – it would be a perfect art studio but great for the yarn and you can see outside now too heehee) – it is difficult and scary and exhausting but a new adventure and we are all with you… – YAY FOR YOU!!! YAY the webcam is up…………..everything looks so amazing………..slumber party in store…….what a way to go…………..got my first order from Colorado and another one is on the way and another one in my basket…………..this afghan i am making has officially taken on its own life………I am such a loopy groupie………………….mY order only took three days….amazing since this is such a busy time and USPS is getting used to the massive packages going out to us everyday……………….Thankyou Colorado Elves and Sheri for continuing such awesome customer relations, Hubby said my yarn has taken over the spare room and he has had dreams that my collection along with my dolls are soon going to invade his man cave…..lol

Ooh, yummy. Last Christmas brought me an incredible soup pot, and I went on a soup-making binge. Five different soups, probably two gallons each, frozen individually. I made the Wild Rice and Chicken soup—same recipe—but substituted Morningstar Farms Chik’n Strips instead. (Real chicken grosses me out.) It worked out great! Froze well, defrosted well—I just finished the last container of that soup. Time to make more!
