Yum!

Are you on Pinterest? I think it’s funny that you can tell if a person has a sweet tooth by the kinds of recipes they pin. Me? I pin all kinds of ooey-gooey yummy-sounding desserts. Do I make many of them? No. But I’m always drawn to pinning them, just in case. I tend to make a lot of the main dish recipes I pin, and I’m always looking for good vegetable and salad recipes on there. But my recipe board definitely tips in favor of desserts. (Here’s my recipe board on Pinterest. See what I mean?)

Here’s one that I tried awhile back. Everyone in my family gave it a thumbs up, even the ones who aren’t usually so fond of cauliflower. (I think the original recipe came from Prevention.com, but I can’t find it on there now.)

Parmesan-Roasted-CauliflowerParmesan Roasted Cauliflower

1 head of cauliflower (cut into 1″ pieces)
2 Tbl. olive oil
1/2 cup grated Parmesan Cheese
Salt and pepper to taste

Toss cauliflower pieces in olive oil. Line a large baking pan with foil and arrange pieces in a single layer. Sprinkle Parmesan, and salt and pepper on top.

Bake at 350 degrees for 30-40 minutes, or until golden brown.

I find that I rarely use cookbooks any more. When I want to try a new recipe, I scroll through the ones I’ve pinned. Do you pin recipes? And do you try many of them? Considering how many recipes I have in that category, I could go a long long while before pinning anything else food related.

  2. Yes, I find all kinds of new recipes on Pinterest. It is so much fun! I have started to mark them as “Pins I Have Tried” (with notes) and “Recipes That I Love” after I try them to keep track.   3. We cook most if not all of our veggies this way – even from frozen. With the frozen we toss in olive oil – two tbsps. – oven on 425 degrees pre heated, sometimes coated in panko or breadcrumbs (1/4 cup) and 4 tbsps of parmesan cheese – put in oven for 15 min, turn and then 15 more minutes. Everything from broccoli, green beans and even fresh kale – love them this way – not mushy and way more flavor – even my 22 month old grandson eats these before the rest of his meal first :-). It’s also good if you drain a can of chick peas and put them in (coated with a little olive oil too) during the last 15 minutes – and put them with the veggies over steamed Texmati rice for a veggie dinner.

  4. Hi! I follow all of your boards Sheri! I always see your ooey gooey recipes! So far, I have made your Congo bars- which were way yummy! I do make a few things that I pin. There was an orange jello salad that was very good! From 6 sisters.com. I love Pinterest! I really have gotten so many great ideas from all of the pins! Lots of great patterns as well. I am going to try the roasted cauliflower! Thanks! :).

  5. I haven’t “pinned” in awhile, but I agree with you about not using cookbooks very much anymore. I realized that I was cooking almost exclusively with my iPad. Gosh, I wonder what my Grandma would have said about that!

    1. Carol – you’re right – it’s a far cry from when our grandmother’s were cooking from well-worn cookbooks (usually just one or two, right?) or recipes written down on cards!

  6. You might really like Cauliflower pizza crust. Google it for many recipes, all basically the same. Thanks for sharing the recipe. We love cauliflower at our house. I make mac and cheese with it. Use it, elbows and smoked gouda cheese.

  7. Thanks for this recipe. We like cauliflower, but I’m always looking for new and interesting ways to prepare it. I don’t go to Pinterest, but I do buy a fair number of cooking magazines (or add them to my Nook tablet.)

  8. Oh, yes. I pin and like and try. I like alot more than I pin. And when I am done, if is grilled cheese and tomato soup because that is all the time I have to make. :)

  9. My husband is always wanting to make baked vegetables, which I think are a waste of electricity. But we always love your recipes–especially the chicken casserole topped with Ritz crackers–so I gave him the go-ahead to try this baked cauliflower recipe. ;-)

  10. I started roasting my veggies last fall and it’s my favorite way to do them now. Even my young adult children, who have always avoided most veggies, will power through oven roasted broccoli, especially if I season it before cooking with a little chopped garlic and Jane’s Seasoning, then top it with parmesan before serving..
